Basic Casserole

Ingredients

1 onion, chopped
1 cup broccoli florets
2 carrots, sliced OR 1 colored pepper (red, orange, green, etc.)
handful of mushrooms, sliced
¾ lb beef, chicken or pork (cubes or ground) or tuna or sausage
2 cups dry whole wheat pasta (macaroni, shells, penne)
1-10 oz can (284 mL) reduced sodium cream of celery or mushroom or chicken or broccoli soup
¾ (175 mL) cup milk
1 tsp dry mustard
½ cup cheddar cheese
salt and pepper to taste
1 ½ cups breadcrumbs

(You can add any vegetables you would like to this recipe.)

Directions

  1. Preheat oven to 375 F

  2. In a large pot of boiling water, cook pasta according to package directions

  3. In a large saucepan, brown meat and the onion until meat is fully cooked. Drain off excess fat and return to saucepan.

  4. Add the cream soup of your choice, the milk and dry mustard

  5. Bring to a boil. Reduce heat and add vegetables. Cook until almost tender

  6. Add cheese, season with salt and pepper to taste. Cook until cheese is melted!

  7. If you like a crispy topping, transfer to a baking pan and top with breadcrumbs (for extra flavour, mix in some Italian seasoning!)

  8. Bake for 30 minutes or until bubbly and breadcrumbs are golden brown
